Raw eggs in recipes in magazines should go

EDITOR, - In 1988 the chief medical officer advised that "people should avoid eating raw eggs or uncooked foods made from them and that vulnerable people such as the elderly, the sick, babies and pregnant women should only consume eggs which have been cooked until the white and yolk are solid."1,2 Despite this advice, raw or inadequately cooked eggs continue to be implicated in outbreaks of illness.3 Magazines and cookery books are a popular source of recipes and can have a role in guiding the public with regard to safe preparation of food. We carried out a survey to see whether these publications encourage compliance with the government's advice.
